Chia Pudding

Your future-self will thank you when you prepare this snack ahead of time. Chia pudding is packed with fibre and healthy fats to keep your hunger at bay, your energy strong, and your skin glowing.


Makes 3 servings - 5 minutes prep - 4 hours idle time


Ingredients:

1 1/2 cups coconut milk or almond milk

1/4 cup chia seeds

1 cup apple, finely diced

1 tsp. lemon juice

1 tsp. vanilla extract

1 tbsp. maple syrup

1/2 tsp. cinnamon

1/4 tsp. salt


Directions:

1. Combine all ingredients in a large bowl and mix well. Allow the mixture to sit at room temperature for 20 minutes, giving the chia seeds a chance to absorb the liquid.

2. Add any toppings you love, like fresh fruit and seeds.

3. Transfer to jars and refrigerate for at least 4 hours or overnight.
